Globally acclaimed chef Alberto Landgraf travels widely, demonstrating his uniquely creative, innovative, and intellectual approach to modern Brazilian cuisine. Located in Botafogo, one of the trendiest neighborhoods in Rio de Janeiro, Oteque is widely considered one the greatest restaurants in Latin America. In this book, Landgraf describes his creative approach in his five guiding principles, which form five chapters, together encompassing the foundation of his methodology: acidity, texture, blocks, leadership, and creative process.
Each of the five chapters begins with a captivating essay by his friend, critic Andrea Petrini. Breathtaking shots of Brazil are paired with images of Landgraf s signature dishes, helping to illustrate his naturalistic approach and connection to terroir. Each of the recipes shows accurate carbon footprint data. Minimising the restaurant s impact on the environment, and considering every aspect of the food chain, are key concerns of Landgraf s, and he has been working closely with a cutting-edge tech team who can accurately calculate the environmental impact of food products, recipes, and raw materials.
